Originally from Kashmir, this is a popular aromatic, North Indian dish. The robust flavour intensity comes from the lavish use of black cardamom, fennel, black pepper and clove.

(Serves 2-3) Stir fry 340g diced chicken, lamb, prawns or mixed vegetables in oil for 5 minutes. Sprinkle over the spice mix and stir fry for a further 1-2 minutes. Add sauce and simmer for 15 minutes, stirring occasionally. Increase simmer time if using lamb. Geeta's Tip: Delicious cooked with lamb & served with brown pullao rice & fresh coriander.
